About Us

Chef Luis Fuentes has been serving the West Maui community for over 30 years, spending many of those years at fine dining restaurants such as David Paul's, Lahaina Grill, and the Ritz-Carlton Kapalua. He has also spent over 20 years as the head chef/owner of Island Catering, bringing fine dining experiences to events across the Hawaiian Islands. Noodle is Chef Fuentes' newest creation, bringing the best of Asian cuisine right into the heart of Lahaina town.
